Cucumber Yogurt Salad |

| Ingredients: 1 lb |
plain low fat yogurt | ||
| 1 | cucumber peeled | ||
| 2 | cloves of fresh garlic | ||
| 1 tsp | fresh chopped mint | ||
| 2 tbs | olive oil | ||
| Preparation: Dice the cucumber, add the cucumber and the yogurt into a bowl. Chop the garlic and the the fresh mint and mix well with the yogurt. Add the olive oil on top and garnish with fresh mint leaf. You can add salt & black pepper. Cover and chill for about two hours before serving. You can serve this dish with a variety of dishes like lamb, and chicken. |
