Cucumber Yogurt Salad

Ingredients:
1 lb
plain low fat yogurt
1 cucumber peeled
2 cloves of fresh garlic
1 tsp fresh chopped mint
2 tbs olive oil
Preparation:
Dice the cucumber, add the cucumber and the yogurt into a bowl. Chop the garlic and the the fresh mint and mix well with the yogurt. Add the olive oil on top and garnish with fresh mint leaf. You can add salt & black pepper. Cover and chill for about two hours before serving. You can serve this dish with a variety of dishes like lamb, and chicken.
