Tuna or Chicken Nicoise

Ingredients:
1
Chicken or Tuna Steak
1 Roma Tomato
1/2 Boiled Red Potato
5-10 Greek Olives
1/2 Boiled Egg
2 oz. Goat Cheese (optional)
1 cup of salad mix (Musclane or Romaine)
1 tbs Balsamic Vinegar
2 tbs Olive Oil
1/2 tsp Dijon mustard
pinch Garlic Powder
pinch  Black Pepper (fresh or coursed)
Preparation:
Slice Tomato, boiled potato and the cooked egg about 1/4 inch thick. In a small bowl mix the vinegar, dijon mustard and all the spices, slowly add the oil while you whisk, make sure that the oil mixed well with the vinegar. Grill the tuna or chicken till done.
To serve this dish you need to arrange the potatoes, tomatoes, eggs and the Greek olives on the outer edge of the plate. In the middle put the lettuce and add the dressing on top of the lettuce & the outer edge. Finally add the chicken or the tuna .
