Shrimp Linguini |

| Ingredients: 12 |
medium size shrimp | ||
| 1 | diced roma tomato | ||
| 1/2 | roasted red pepper | ||
| 1 cup | Broccoli | ||
| 1/2 cup | sliced mushrooms | ||
| 2 cloves | fresh garlic shopped | ||
| 1/2 cup | sliced white onions or green onions | ||
| 2 oz. | Olive oil | ||
| 1 tbs | fresh squeezed lemon juice | ||
| 1/2 tsp | white pepper | ||
| 1/2 tsp | dill (dry or fresh) | ||
| 4 oz. | champagne | ||
| 5 oz. | heavy cream | ||
| Preparation: Sauteed onions, garlic, mushroom, and spices in olive oil on high heat for about one minute. Add shrimp and cook for about two minutes add broccoli, roasted pepper, and tomato for another two minutes. Add champagne (be careful if the pan is hot it may flame) cook for about one minute until most of the alcohol evaporate, add heavy cream cook two minutes till thickens. Serve over hot linguini, with fresh bread. Garnish with fresh parsley, dill weed, and Parmesan cheese. |
