Shrimp Linguini

Ingredients:

medium size shrimp
1 diced roma tomato
1/2 roasted red pepper
1 cup Broccoli
1/2 cup sliced mushrooms
2 cloves fresh garlic shopped
1/2 cup sliced white onions or green onions
2 oz. Olive oil
1 tbs fresh squeezed lemon juice
1/2 tsp white pepper
1/2 tsp dill (dry or fresh)
4 oz. champagne
5 oz. heavy cream
Preparation:
Sauteed onions, garlic, mushroom, and spices in olive oil on high heat for about one minute. Add shrimp and cook for about two minutes add broccoli, roasted pepper, and tomato for another two minutes. Add champagne (be careful if the pan is hot it may flame) cook for about one minute until most of the alcohol evaporate, add heavy cream cook two minutes till thickens. Serve over hot linguini, with fresh bread. Garnish with fresh parsley, dill weed, and Parmesan cheese.
