Stuffed Potatoes |

| Ingredients: 1 lb |
ground lamb | ||
| 1/2 | chopped white onions | ||
| 6-8 | peeled medium size potatoes | ||
| 2 | diced tomatoes | ||
| 2 | chopped gloves of garlic | ||
| 4 oz. | vegetable oil | ||
| 10 oz. | tomato juice | ||
| 1 tsp | all spice | ||
| 1/2 tsp | nutmeg | ||
| Preparation: To make the stuffing cook the meat, onions, garlic and all the spices including salt & black pepper set aside while you make the potatoes. To make the potatoes make a hole on one of the end about one inch in diameter and core all the potatoes and save the inside. Make sure you keep the cored potatoes in cold water. Now in a frying pan add 2 oz. of the oil and the inside of the potatoes till gets brown. In the same pan cook the cored potatoes with the rest of the oil till brown on all sides. Now the cord potatoes are ready to be stuffed. Stuff the potatoes with the stuffing. In a square pan add the cooked potatoes (the inside), diced tomatoes and the tomato juice. Spread evenly and add the stuffed potatoes on top cook in the oven at 350 for about 30-45 minutes. Make sure that you cover the pan the foil paper. Serve with hot pita bread and Cucumber Yogurt Salad. |
